Poached Eggs with Wilted Spinach

  • 2 / Eggs, whole

  • 200ml / Water

  • Handful / Spinach, wilted

  • 3 teaspoons / Fresh parsley, chopped

  • Fresh ground pepper

  • Pinch / Ground nutmeg (optional)


  1. Bring water to the boil in a small saucepan
  2. Crack an egg into a cup
  3. Using a spoon, stir the water very quickly to create a ‘whirlpool’ and then slide the egg very carefully into the water
  4. Repeat with other egg
  5. Simmer for three minutes or until each egg is firmly set
  6. When eggs are cooked, remove from pan with a slotted spoon and place on a bed of lightly wilted spinach
  7. Garnish with freshly chopped parsley and ground pepper (sprinkle nutmeg if desired)
