Savoury Vegetable Crepe

Ingredients
- 1/2 cup / chickpea flour
- 1/2 / Carrot, grated
- 1/2 / Zucchini, grated
- Optional vegetables: 1/4 cup spinach leave or 1/4 cup beans, finely chopped)
- 1 pinch / Turmeric powder
- 1 teaspoon / Ajwain/cumin seeds
- 1/2 / Green chilli, small finely chopped (optional)
- 1 teaspoon / Ginger, grated
- Sea salt
- Handful / Coriander leaves, chopped
- Ghee or coconut oil
Method
- Mix all the ingredients together and add water to create a batter-like consistency
- Place a frying pan on low heat and add a spoonful of batter to the hot pan. Smooth around to form an even pancake/crepe shape
- Once slightly brown, add a few drops of ghee to the sides of the crepe and flip to cook the other side
- Once the other side is slightly browned, remove from the heat and serve
