Savoury Vegetable Crepe

Ingredients

  • 1/2 cup / chickpea flour
  • 1/2 / Carrot, grated
  • 1/2 / Zucchini, grated
  • Optional vegetables: 1/4 cup spinach leave or 1/4 cup beans, finely chopped)
  • 1 pinch / Turmeric powder
  • 1 teaspoon / Ajwain/cumin seeds
  • 1/2 / Green chilli, small finely chopped (optional)
  • 1 teaspoon / Ginger, grated
  • Sea salt
  • Handful / Coriander leaves, chopped
  • Ghee or coconut oil

Method

  1. Mix all the ingredients together and add water to create a batter-like consistency
  2. Place a frying pan on low heat and add a spoonful of batter to the hot pan. Smooth around to form an even pancake/crepe shape
  3. Once slightly brown, add a few drops of ghee to the sides of the crepe and flip to cook the other side
  4. Once the other side is slightly browned, remove from the heat and serve

use coconut oil
