Broccoli & Almond Soup
Ingredients:
- 50g (1/2 cup) ground almonds Â
- 900ml vegetable stockÂ
- 675g broccoliÂ
- Himalayan salt and black pepper to tasteÂ
Method:Â
- Cut broccoli into small florets and place in saucepan.Â
- Add stock and bring to the boil. Simmer for 6 – 7 minutes until tender.Â
- Add the ground almonds and blend with a hand held blender stick or food processor until smooth.Â
- Add salt and pepper to taste.Â
- Pour into serving bowls and serve immediately
